Basterma(dried beef) Mushroom Balls
Ingredients: 3tablespoons olive oil 1onion, chopped 3garlic, minced 1/2cup leek, chopped 1/2cup celery, chopped 3cups mushroom, chopped 2tablespoons fresh sage, finely chopped 1cup basterma, chopped Salt and pepper 3cups stock 3cups bread, medium chunks 2cups parmesan cheese, grated
:Method
Preheat oven to 180 degrees Celsius- - Heat oil in a large skillet over medium heat, add onion and garlic, stir for 5 minutes until translucent- - Add leek, celery, mushroom and sage and stir for about 10 minutes until well combined- - (Stir in basterma,season with salt and pepper(note that basterma has salt- - Add stock, let boil, add bread chunks and stir gently until it absorbs all stock- - (Grease oven tray, arrange scoops of mixture (using ice-cream scoop- - Toss with grated cheese- - Bake for about 10 minutes until golden brown- - Let cool and serve warm-
