Beef Vegetables Stew-Salounah
:Ingredients
4Garlic cloves
1Tablespoon coarse salt
1Teaspoon paprika
1Teaspoon ground cumin
1Teaspoon ground turmeric
1/2Teaspoon ground cardamom
1/4Teaspoon ground ginger
1/4Teaspoon grated nutmeg
1/2Teaspoon ground dried lime-Loomi
4Tablespoons oil
2Kg lamb, cubes
1Large onion, diced
1Tablespoon tomato paste
5Cups water
3Zucchini, cubed
3Eggplants (Small), cubed
3Carrots, cubed
2Potatoes, cubed
Method:
Mash garlic with salt, combine with spices-
Add 2 spoons of oil and stir, rub meat to the mixture, cover and keep in fridge for 2 hours-
Heat the remaining oil in a large pan over a medium high heat, add oil and stir till translucent-
Add marinated meat, tomato paste and water, bring to a boil-
Reduce heat and simmer for about 1 hour or until tender-
Add vegetables and cook for about 15 minutes or until done-
Serve Salonah with rice or bread.
